Friday Foodday

Happy Black Friday lovebugs,
Here are my favorite recipes this week.

Holiday Mule
c/o Home Sweet Jones
Ingredients
  • 1/2 oz simple syrup
  • 1/2 oz unsweetened cranberry juice
  • 1 1/2 oz gin or vodka
  • 2 oz chilled ginger beer
  • 1 rosemary sprig 
  • orange slice, for garnish
  • sugared cranberries, for garnish
Directions
Combine simple syrup, cranberry juice, and gin. Pour over ice and top with ginger beer. Serve garnished with rosemary, orange wedge and sugared cranberries, if desired.



Leftover Cheesy Mashed Potato Puffs
Ingredients
2 cups mashed potatoes
3 large eggs, beaten
1 cup grated cheese such as Parmesan or Gruyere, divided
1/4 cup minced chives
1/4 cup diced cooked bacon or ham, optional
Salt and freshly ground pepper
Sour cream, to serve

Directions
Heat the oven to 400°F and lightly grease the cups of a mini-muffin tin.
Whisk together the mashed potatoes, the eggs, 3/4 cup of cheese, the chives, and ham. Season, if necessary, with salt and pepper. The seasoning will depend on how seasoned your mashed potatoes were to begin with.
Mound a spoonful of the mixture in each muffin cup. Sprinkle the tops with the remaining 1/4 cup of grated cheese.
Bake for 20 minutes, or until the potato cups are set, browned on top, and hot through. Let cool for about 5 minutes in the pan, then use a spoon or knife to gently release them from the pan. Serve immediately with dollops of sour cream, if desired.

Pecan Pie Bites
Ingredients
  • 1 package of 15 mini phyllo shells
  • ½ cup chopped pecans (if you have whole pecans or pieces just chop or bash them up)
  • ¼ cup packed light brown sugar
  • 2 tablespoons half and half cream
  • ½ teaspoon vanilla extract
  • A pinch of salt
Directions
  1. Pre-heat the oven to 350. Line a baking sheet with aluminum foil. Unwrap the package of phyllo shells and place them on the baking sheet
  2. In a mixing bowl, combine the pecans, brown sugar, half and half, vanilla and salt and stir together until well mixed. Spoon the pecan mixture evenly into the phyllo shells and place the baking sheet in the oven. Bake for 10-12 minutes until the edges of the shells start to turn golden and the filling is heated through.

Jive Turkey

Happy Monday lovebugs,
It is a busy week for bloggers as it's Black Friday and Cyber Monday very, very soon. While I do not plan to inundate your with gift guides, I would love to know what you'd like to see in terms of posts this holiday season. Friday Foodday

Happy Friday lovebugs, 
Here are my favorite recipes this week.

Red Wine Hot Chocolate

Ingredients
  1. 1 1/2 cup milk (I used 2%)
  2. 1 cup red wine (I used Kendall-Jackson Cabernet Sauvignon)
  3. 1/3 cup dark chocolate chunks
  4. Optional: coconut whipped cream

Directions
In a saucepan over medium heat, combine milk and chocolate chips.
Whisking constantly until chocolate is melted into milk and you have a thick
and creamy chocolate milk. Pour in red wine and heat until everything is hot.
Pour into 2 mugs or 6-8 smaller glasses and top with coconut whipped cream.




Skillet Lasagna
Ingredients
  • 1 pound ground beef
  • 1 sweet onion, diced
  • 2 cloves garlic, minced
  • 1 package Marie Callendar's Family Recipes Zesty Tomato
  • 15 ounces canned diced tomatoes
  • water, as called for on package
  • 1/2 cup ricotta cheese
  • 2 tablespoons powdered Parmesan
  • 1 teaspoon garlic powder
  • 1/4 cup chopped parsley, divided
  • 1/2 cup grated mozzarella cheese
Directions
  1. Heat a large, deep skillet over medium heat. Add the ground beef and break it up as it cooks.
  2. When meat is just slightly pink, stir in the onion and garlic. Continue cooking until meat is cooked through. Drain fat and return to pan.
  3. Add the package of pasta, seasoning, diced tomatoes, and water to the skillet and stir to combine.
  4. Bring to a boil, cover, and simmer for 14 minutes or until the pasta is tender.
  5. Stir together the ricotta cheese, Parmesan, garlic powder, and 1 teaspoon of parsley.
  6. Remove the skillet from the heat and sprinkle with the mozzarella cheese.
  7. Drop spoonfuls of the ricotta mixture over the pasta.
  8. Cover and let sit for 3 minutes or until cheese has melted.
  9. Sprinkle with remaining parsley before serving.

Peppermint Patty Brownies
Ingredients
Canola oil
1 box brownie mix
16 mini York Peppermint Patties

Directions
  1. Oil an 8-inch square pan. Prepare the brownie batter according to the package directions.
  2. Spread half the batter in the prepared pan. Top with the peppermint patties, leaving an even border of batter all around the edges of the pan.
  3. Spread the remaining batter on top and bake according to the package directions. Let cool, then cut into 16 squares.

Neck and Neck

Let's play with tie neck blouses. They are so feminine and easy to throw on and go. The detail that comes with this style makes it easy to add some stud earrings and walk out the door. Well, pants too, remember to add pants. While there are tons of tie neck tops out there, the ruffle detail is the perfect ingredient to add to this delicious recipe.

In the Navy

Happy Monday lovebugs,
Today we are combining two of my favorite things: cheese and bacon. Kidding. Navy and stripes. Two classic styles that go beautifully together.

The width of these stripes are fantastic. Gives it a sailor vibe.

Classic silhouette, great stripe, and this price! A peacoat will never go out of style.

How cozy does this sweater look? I'd dress it up for work with long pearls and for play I would add a contrasting oxford underneath.
